Chef Lon Symensma

Chef Lon Symensma opened ChoLon in Denver in 2010, having already earned two stars from the New York Times during his time working at Buddakan in New York City. In the last nine years, Symensma has opened Cho77, Concourse Restaurant Moderne and BorraCho Tacos, and founded the ChoLon Restaurants Concepts group with business partner Christopher Davis-Massey. In 2018, Symensma opened Western-European concept LeRoux in downtown Denver.
